Is there any faster trains in some train set than 640 km/h? I were looking for and i didn't found. Thanks.

Most trainsets out there try to use realistic speeds as much as possible. There's no real-life train travelling faster than about that speed.

You could try and create a newgrf file that modifies train speeds yourself.

Or you could use TTDAlter to alter the original vehicles, but you'd have no new graphics.
