Yes. Many of the new building sets add buildings, rather than replacing old ones.

2x2.

2x2? that sucks... is it possible to code seperate 2x2 buildings so that they only buff up against each other is a certain order? - and only build together as "one" unit?

Nope. The only way you could have a building larger than 2x2 is to make it an industry.

Is there a limited amount of industries we can have?

Yes, there is. Max "number of possible industries is 37, and non-overridden original types count towards this limit."

In theory you could have an industry that behaves pretty much like a town building, i.e. creating passengers. The Japanset has castles that do this - they are tourist attractions, so they both accept and create passengers. They're only 2x2, but as "industries", I suppose they could be larger.
