. the copper ore mine(s) should not have been built; will be fixed in the next update. Currently there is no 3rd party industry set (I know of), that has copper ore or copper (the metal) available in temperate or arctic games.
. unless PBI has a paper and/or food vector you should not have the paper and/or food industry either; although the CanSet does provide transportation of this cargo types, because they are normally provided by 3rd party industry sets.

Trying is no crime ... obviously everything seems to work, except you cannot transport copper ore and that is intended in your case.

The next update of the CanSet will have copper, the metal, added together with an 'Ore Processing Plant' (replacing the steel mill), accepting iron ore, copper ore and coal and producing steel and copper; and a 'Metal Fabrication Plant' (replacing the copper factory) accepting steel and copper and producing goods. BTW, other TTD 'original' industries are not affected.
