according to your map, if this is possible, it would be awesome to have a route between Garninford (or whatever it is) Junction and Slunfingfield (again whatever it is)

That would be quite a journey (plus, it would overload the over-capacity Mountaineer even more). But it's possible and it will be put up for consideration.

The company has expanded, with Jacko's line and others. To help control demand, the company has raised fares (aka lowered the passenger production).
First screenshot is Quarfingfield.
As a small town (compared to its station), Quarfingfield is mainly for passengers transferring between the various trains that stop here. The tracks for the Forest Flyer, the only non-terminating service here, are at the top of the picture (there are no trains there at the moment because there is a track work-related service suspension). Below are the five tracks for terminating trains. A Quarfingfield Airporter is just pulling out of the yard onto Track 3, where it will board its passengers and proceed to the airport. A Parker from Track 4 and a Rutlander from Track 7 are also pulling into the yard, where they will await their turn to depart. A Mountaineer Express (Track 6) is also waiting for the switches to be set to allow it to proceed to the yard and clear the platform for other trains, while a Mountaineer Local is just arriving on Track 5.
The company is also considering moving the Forest Flyer to Tracks 3-7 and abandoning Tracks 1-2, to conserve space and allow more routing possibilities.
This is Brudinghead Airport station, along with a yard. This yard is only for routine maintenance work. When heavy-duty work is required, the trains are transported by truck to the overhaul shop near Quarfingfield. The Parker goes through a national park between Chadham / National Park and Fuborough stations. At Fuborough, in a design oddity, the trains switch travel directions and travel on the left-hand side. This is because the signal south of Fuborough was needed, but the company was not allowed to invade any more national-park territory.
On the south platforms, two Parker trains meet, while a Southerner boards on the northern platforms.

Quarfingfield Airport: A plane is just taking off, and the passengers in the approaching Quarfingfield Airporter are muttering uncomplimentary things about the company because they missed the plane. However, it's no problem, as they will be at the station in time for the next flight. The Teddy Bear: thus named because it goes to Tedwood. And a new Quarfingfield, with passing freights, all terminating services, and the Forest Flyer all sharing six platforms. Major delays are only avoided because of careful interlocking construction.

A new company, Allen & Co, has been started.
Yorkville is the central, drastically underused station (only Miller services stop here for now). Also visible is Yorkville Tower, which controls switches and signals for the entire area. Yorkville Yard, where trains wait for their turn to enter Yorkville Station and proceed. And the two other stations on the line (yes, it's short). In the top screenshot, a train to Yorkville is just leaving while a train to Millville is boarding passengers. In the other picture, a train has just departed from Millville. However, the company president has just run onto the platform. Therefore, the train will be called back for him.

Anyway, more shots:
The company has rapidly expanded, with a new local/express set of services (the Florence Flower and the Mason Steamer).
First is a reworked Yorkville Station. Residents are angry about the fact that the company is using up an extra, unneeded row of tiles that could be used for buildings. However, the company refuses to back down. This is Johnson City, the first express stop on the line. The passengers on the arriving Florence Flower are hoping that the Mason Steamer now in the station will wait for them. Mason, where the dispatcher in the tower is waiting for the Steamer to clear the yard switches so he can set them to allow the train to return and start its journey back.
