You are free to lock any files you like. Taking, for example, the GPL, there's no obligation to release or distribute any derrivative works, and if you're working on something from scratch, there's absolutely no obligation to publish at all.
Even if you intend to publish at some time in the future, there's absolutely no enforceable requirement at all that you make intermediate, work in progress files available. Even if you wish to release all your blender files as the "source code" to your sprites, there's no reason to release these files to the world at large until the sprites themselves are released.
So, basically, you're free to restrict access to any (or all) of your files at least until they are released, even if they are derrived from something with a GPL-like license.
