Don't send big planes to small airports. Other than that, you can't do anything about it, it's part of the game.

there are two kinds of plane crashes:
crashes because of short runway: the newer planes require a long runway, like the one of the city airport (6 tiles). the chance for crashing increases drastically if you try to land them on a small airport (4 tiles) or commuter airport (5 tiles(?)), so avoid those airports
completely random crashes: the chance of these is rather low, but you cannot disable those crashes.

My plane just crushed its landing gear. Now that's an awckward situation. 

NewGRF: Oil Wells in Temperate terrain now can Increase production, Better vehicle names, Use-able default aircraft, Oil Rig for Snowland and Desert, Speed for Suspension bridges.
Patches (OpenTTD): Improved smooth_economy [in trunk], More (diesel) smoke [in trunk], Realistic_acceleration finetune.

you can stop it actually, on the difficulty settings you can turn disasters off. i think that includes plane crashes doesn't it??
