The Fairwater Yard one in Tiverton is in a Perfect place to look at the Yard, stopped there once on my way to Dawlish and managed to see a Few Freightliner 66's and rakes of NR wagons.
If you're in a car, you're as well looking over the bridge near Taunton School, as you can see right into the throat of the yard. Near the post office site on the other side of the road bridge there used to be a footbridge which was a great spot for photography (and showed how wide the GWML used to be at that point!) but I've a sneaky feeling it may have been dismantled or at least closed off
