In the scenario editor some of my mods have this asterisk in the name

here is one of them. US* Dash 7 C30-7 CSX.

I have more like this (not all are like this), but it only affects some assets that come with the US Mega Pack.

If we have any idea why that would happen, yes. But you got your files from the same place I got mine, and there's been no indication that any files have recently been updated, especially because those who made them haven't been active in ages.

Therefore, I have no clue.

Did you run the serpent installer recently? If I remember correctly, it renames all the vehicles it uses with a *. Could be wrong though, I haven't ran that for a long while.
