"Complex" is a weird goal to aim for imho, and it is easy to achieve, just add loads and loads of tracks without system.
A more useful goal imho is to aim for simple yet powerful junctions, a much more difficult goal to achieve.

My latest, (left hand running, in quad track the inner sets are usially the fast lines, as per normal UK practice)
10 Platform station with trains up to 12 tiles (most are 8 tile, a fair few 12 tile and a couple of 4

main flows are, (I define north as the top right of the screen i think the game calls this NE)
North (quad track) to station - 12t expresses 8t stoppers and back again
South (double track) to station mainly 8t stopping passenger and back
West to station (quad track) 8t heavy commuter EMUs with some 4t emus on a branch line and back

all in all 62 trains currently call at the station (5x 4t, 12 x 12t and the rest are 8t)
I have managed to have 3 trains simultaneously entering the station while 2 are leaving and another 3 at various stages of loading!
in theory assuming all trains are entering the left hand platform pair and all trains are leaving from the other platform pair there could be 4 trains into the station while 5 simultainously leave!

less major flows are
north - south - 8t stopping pax
South - West 4t branch pax
North - west 8t stopping pax

And not a screenshot but here is the most complex real life junction I know of (I know it looks like a painting, but AFAIK its a hand colouring of a black and white photo)

No diamond crossing, only one north-end bay survives and only one avoiding line now.

At least with the loop formed by King Edward Bridge at the south end and High level Bridge at the north end, Newcastle retains excellent flexibility for train movements.
