I'm trying to run a dedicated server, but am having a problem. I can play the game fine in GUI mode, and have all the files needed in the Data folder (obviously, since the game runs). But when I do the console command ./openttd -D it launches OpenTTD and then I get the error "Cannot find sample.cat"
There's two things weird about this - isn't dedicated server supposed to run entirely in console? Why is it launching the OpenTTD application? And why does it say I don't have the sample.cat file when I do?

I got the same problem. Anyone have a clue about whats wrong here?

No idea what the problem is. Could be something with search paths being/behaving different for the OSX dedicated server, but I've got no real solutions for you. I'm assuming you are running the dedicated server in the same way you run the non-dedicated client/server minus the -D parameter, right? If that's the case, please open an OSX bug report so it might get fixed once we get an OSX developer.

Your sample.cat and other base graphics files (mind the case!) resides in ~/Documents/OpenTTD/data ?
