Question Regarding the Coding of Stations

Firstly, please forgive my lack of technical knowledge here, it's been a long while since i have dabbled in NFO Coding.
What I have been wonderign a lot lately is about the way stations are coded. Realistically, stations very rarely have a platform between each track within a station, exceptions perhaps being at a few larger stations and/or terminii. Why is it that most Station Sets are coded this way? Is it due to difficulty on the coding end of things? Or more graphic wise?
For example this very rough, please excuse my botching of this fine grf, mockup shows what I'm aiming to demonstrate:
On a similar note, things like Island Platforms etc are they of a similar nature?
Any responses, opinions, comments etc are welcome
