Such as tunnels that change hieght or go round corners or use a strange application of string theory to go of one edge of the map and onto another or even under sea or .......

Yes ... ALL (Ha!) you have to do is set the sea level up one notch so that there is a level below sea level so to speak. now make a hole down to this level on both sides of the sea. It is now easy to build your tunnel!
Pity it can't be done.

can be done in scenarios, instead of making the water you want water, make it canals and tunnel under it.

How exactly do you make canals in the scenario editor again? I have the switch and the GRF enabled, but the button isn't there.

"Done" as in "deemed a bug and promptly fixed".

If you've got one of Oskar's early autoslope patches, or can run TTD without the patch, you can duplicate this, if you know how.

wasnt it also a bug in the crossing tunnels switch.
