Does anyone know how I leave the stations without "roofing" or mods that leaves the stations in the form of a platform?

Just build a single-platform station over part of an existing multi-platform station. The overbuilt part will still belong to the same station but will look like a single platform, i. e. without roof.

Also, there are multiple newgrfs that provide additional platform designs, both with and without roofs.
