How do I get industries to produce more of their products?

Is there some way to make coal mines produce more coal? Whenever i service an industry, even if i put a 10-wagon train to load on the station, some of the industries don't produce more output.

Sorry if this question seems dumb. I'm sort of a TTD newbie.

production changes is random ...
if you service industry then there is a bit higher chance to raise production than lower (not apply to oil wells because they are going to be closed sooner or later)
