I believe that WAS is going to be updating with the 787 and A350 soon, so watch out for that. Other than that, I don't think Av8 will have many more updates as Pikka is busy with Pineapple 32bpp/EZ add-ons at the moment

Yes, you can run multiple NewGRFs. AV8 an WAS work together fine, although there will be differences in costs.

If they are listed as individual NewGRF files, you can load multiple sets at once. The only project that is currently active which is focused on adding models from commercial airline companies is World Airliners Set.

If you want to combine them into one NewGRF, then you are going to have to learn how to develop NewGRF files, decode and encode in either NFO or NML, and how to draw graphics. If you intend on using works that have already been published, you will also need to seek the permission of those who created the previous works in order to use them in your own published project.
