ok i have been asking A LOT about production up and down but its the stock pile i need to stop disappearing.

if its a long while between loading it will stockpile up around say 700 then decrease at the same rate it increased, can i stop this

Yes, use more trains to take it on its way.

or the old 'stop at x wait for full load of y. stop at x unload all y'
to maintain full production.
