will there be one day servers that use newgrfs ? Open ttd is a great game but there are newgrfs because it's boring after some time.

There are servers who use newgrfs.

Servers can choose the GRFs to use on their servers. So it depends what the server host likes.

A lot don't use GRFs simply because it opens it up to more players who don't have the GRFs.

To say, a lot of servers restrict themself to BaNaNaS GRFs as the player doesn't need to search a hour for these.

You are assuming people want to download them to start with. A lot of people won't be comfortable trying to play in a server with newgrfs as they'd be at a disadvantage compared to people who know the differences the grfs make.
Simplest thing to do is, start your own server.

Most online server players are playing the game competitively. NewGRFs do not give you any advantage in a competitive game. And many people do not have fast connections. NewGRFs create more data that has to be downloaded and uploaded. So most servers don't include them.

How do i start a server on open ttd ?

Go in "Multiplayer Mode", click "Start server" and you can choose between loading a game, be it single-player or saved from multiplayer, starting a new game, loading a scenario or a heightmap.
