Somebody found a way to build a ride that takes 210 days to complete.

Not in-game days. That's starting up Roller Coaster Tycoon on New Year's Day, January 1, and letting it run non-stop until July 29th, 2016.

Couldn't you have several layers and then cover the area multiple times? Sure, you would have some speed increase when going down, and you couldn't go back on the same route obviously, but with more than two layers it should still take longer. Not trying to find out, though.
