Slicing technic in general: enter polygon mode, select polygon, press 'slice plane', move it where you want and press 'slice'.

Next step is creating planes instead of deleted
to create a plane: enter polygon mode, press create, left click on vertexes [1,2,3..n,1] where you want to create a plane. If you don't see any created plane it's because it has wrong normal mode - exit create mode, click created plane and press flip
