Is there a easy way to find out which station/city would accept a specific good?
I have one station with "valuable goods" ("Wertsachen") but now other station which accept them.

If you aren't sure what type of industry you need, there's a chain viewer under the same menu.

Wertsachen are accepted by a bank.
It is an industry.
Open the mini-map, display the industries.
The bank is white, inside a town.
For easier finding them, do not show the name of the towns on the minimap.

Can I establish a chain for that?
I tried to build a truck station between a bank and a second one direct on a train-station.
A train unload all its value-goods on that station, no matter if the station accept them.
But the truck station never offer these goods to my truck. ,(

You mean a feeder service, using more than one vehicle to transport the cargo?
yes you can, see http://wiki.openttd.org/Feeder_service
The trick is to use "transfer" for unloading, which means "unload here so it can be picked up again by another vehicle".

make sure the train station and truck station are connected (use the same station sign)
use ctrl+click to build connected stations.
also, you cannot transfer both ways, unless you use cargo distribution.
